Properties: Insol in water, sol in a 60% aq alcohol soln at 25°. Maintains proteolytic activity in aq solns of pH 4.7 at 25° for 8 hrs. Incapable of clotting blood plasma, but clots milk. The proteolytic activity upon urea-denatured hemoglobin and upon acetyl-1-tyrosine ethyl ester is such that the ratio of its hemoglobin to ATEE activity is at least 150.
